Bring a well salted pot of boiling water to a boil. Add the diced potatoes and cook at a simmer until the potatoes are fork tender. Chill the potatoes and reserve.
In a small pot add the Canola Oil and AP Flour, add the Original Refrigerated Hope & Sesame Milk. Bring to a simmer and whisk vigorously until smooth and thickened. Chill and reserve.
In a bowl combine the cooked and chilled Idaho Russet Potatoes, thickened Hope and Sesame Milk, Prepared Mayonnaise, Curry Powder, Rice Vinegar, and season with salt to taste
