Mashed Potato & RightRice Mini Pancakes
No special gadgets needed for these mini mashed potato and RightRice pancakes! 👍 Try out this new curried apple mustard dip, or pair with your favorite classic apple sauce or vegan sour cream!
1 package Garlic Herb RightRice
- 1 ½ cups water
- 2 potatoes baked, flesh removed
- 1 cup gluten-free matzo meal
- Salt to taste
- Lemon pepper to taste (optional)
- Avocado oil for frying
- 1 cup whole-grain mustard
- 2 tsp curry powder
- 1 apple, diced
- 1 Tbsp prepared apple sauce
- Salt as desired
For The Curried Apple Mustard
Follow packaging instructions to prepare Garlic Herb RightRice on the stovetop.
Add the potato and mash together with a fork. Once combined, place in refrigerator for about 5 minutes or until cool enough to handle.
Remove from the refrigerator and shape into discs. Season with salt and lemon pepper as desired.
Sear on high heat in a skillet with avocado oil until golden brown on both sides
For the apple mustard, combine whole grain mustard, diced apples, prepared apple sauce, and curry powder. Dip, and enjoy!
