Mediterranean Power Bowl
Try this go-to easy recipe when you're craving Mediterranean cuisine will hit the spot! It is full of colorful veggies and plant-based protein making it perfect for meal prep or a quick meal.
RightRice® Mediterranean 7oz pouch
- ½ cup canned white beans
- ½ cup chopped tri color bell peppers
- ½ cup chopped cucumber
- ¼ cup chopped tomato
- ¼ cup crumbled (vegan) feta
- 2 tbsp chopped red onion
- 2 tbsp Italian Salad Dressing (or Balsamic Vinaigrette)
- Crunchy chickpeas for garnish
- Basil or parsley for garnish
Prepare full pouch of RightRice® according to package instructions.
Chop bell peppers, cucumber, tomato, and onions.
Combine RightRice®, chopped veggies, and dressing in a bowl.
Plate and garnish with crispy chickpeas and chopped herbs. Enjoy!
