Preheat the oven to 400°F
Remove gills from portobello mushrooms. Apply olive oil, salt and pepper, and roast until fork tender (about 15 minutes).
Prepare RightRice Holiday Stuffing per the package directions (bring water to a boil, add RightRice to the water, turn off the heat and let sit for 12 minutes)
While the RightRice is sitting off heat, add the olive oil, onion, sunchokes, and bell pepper in a large pan on medium heat. Cook until onions are translucent.
Add the sage, garlic powder, red pepper flakes, diced apple, and dried cherries. Cook until aromatic then turn off the heat and add the prepared RightRice Holiday Stuffing. Stir to combine. (Be sure to turn off the heat – ya don’t want the RightRice to stick to the pan!)
Stuff the mushrooms with the RightRice Holiday Stuffing and serve warm. Enjoy!
