Crispy Chickpea Salad

½ Package RightRice Original, Prepared
- ½ Avocado
- 2 Baby Cucumbers, Diced
- 1 Can Chickpeas, Drained and roasted until crispy
- ⅓ Cup Mint, Chopped
- ½ Cup Parsley
- ½ Red Onion, Diced
- 1 Tablespoon Jalapeños, Seeds Removed, Diced
- ⅓ Cup Walnuts, Toasted & Chopped – if ya feelin’ fancy!
- ½ Cup Olive Oil
- 1 Lemon, Juiced
- 1 Garlic Clove, Grated
- Salt and Pepper to taste

Roast drained, dried chickpeas on parchment lined baking sheet on 350 degrees for 45 minutes.
Prepare RightRice according to package directions.
Make the dressing by combining all the ingredients in a bowl and mix well.
