Cook the RightRice™ according to the package instructions, then cool down to room temperature.
Prepare veggies and chicken. Once RightRice™ reaches room temperature, split evenly among four bowls.
Top each bowl with 1 cup of arugula, ¼ cup of cherry tomatoes, ¼ cup of cucumbers, ¼ cup of pickled onions, and 3-4 ounces grilled chicken. Finish with 1 Tablespoon hummus, 1 Tablespoon tzatziki, and desired amount of crumbled feta.
Serve with a side of fresh pita bread or baked pita chips.
