Wild Mushroom RightRice Risotto
1 bag Wild Mushroom RightRice Risotto
- 16oz of mushrooms
3 Tbsp. vegan butter
- 1 tsp. olive oil
- 2 sprigs of fresh thyme
- Parsley for garnish
- Salt and pepper
- Prepare the Wild Mushroom RightRice Risotto following package directions.
- While the RightRice Risotto is standing, start cooking the mushrooms. In a large frying pan, melt the butter with the olive oil. Add in the springs of thyme. Once the butter is melted, place the mushrooms in the pan, season with salt and pepper, and cook for about 6 minutes.
- To serve, divide the RightRice Risotto into two bowls and top with the mushrooms. Garnish with chopped parsley.
